Pan Seared King Mackerel

Ingredients: 1 lb King mackerel
2 tsp Toui’s Creole Seasoning
½ Lemon or Lime
1 Tomato
1 Cubanelle pepper or Sweet pepper of your choice
2 tbsp Olive oil
Directions: Put fish in a bowl with a little water and squeeze ¼ of Lemon on fish and mix. Take fish out and dry. Place fish in pan to season. Add 2 tsp of Toui’s Creole Seasoning and rub in well. In a hot skillet add 2 tbsp of Olive oil in pan. When hot place fish meat side down in skillet. Julian peppers & Tomato. Place tomato & peppers around fish in skillet to cook. When fish is cooked( has a nice brown finish) about 4-5 minutes depending on the thickness of the fish. take fish out and continue cooking tomatoes and peppers till tender. Add salt if needed. When done place on top of fish and enjoy.
